Serves 8 pancakes


Ingredients

  • 1 cup of oat flour

  • 1 tsp of baking powder

  • 4 tbsp of Koyah Organic Beet Powder

  • 2 whole eggs

  • 1 cup of vanilla Greek yogurt

  • 1 tsp of butter baking emulsion

  • 1 tsp of vanilla extract

Toppings:

  • Vanilla Greek Yogurt

  • Fresh strawberries


Instructions

  1. In a large mixing bowl, combine the dry ingredients: oat flour, baking powder, and beet powder.

  2. In another bowl, whisk the eggs and then stir in the Greek yogurt, butter baking emulsion, and vanilla extract until smooth.

  3. Gradually incorporate the wet ingredients into the dry ingredients, stirring gently to avoid overmixing. The mixture should be somewhat lumpy.
