Strawberry Cheesecake Cookies (Low Carb, Gluten & Dairy Free)

Glad that cheesecake and cookies are a whole year long trendy recipe because these will be on repeat all year long! Specially when we are adding that touch of chocolate and strawberries. These only have 5.9 net carbs per serving, free from dairy and gluten and packed with all the flavors!


Well, just when we thought cookies couldn't get better this recipe popped into my mind, it was now some time since I wanted to bake some cookies and out of the sudden strawberry season is here! Chocolate and cream cheese is just part of my DNA so it also sounded right to be included in this recipe.



About these Strawberry Cheesecake Cookies:

We are keeping it very simple, flavorful and nourishing. For the cookie base I simply used Organifi Vanilla Complete Protein, also vegan and organic! To make these gluten free and low carb... plus it adds such a good flavor!


Protein powder, specially plant-based ones have been my hack when it comes to making recipes more flavorful and satisfying thanks to the protein content, plus is makes the recipes low carb too! The perfect combination for steady glucose levels!



The filling is a creamy and flavorful combination of dairy free cream cheese along with some granulated monk fruit. And as toppings I simply added those strawberries and chocolate pieces that are also low carb.

Jojo's is one of my favorite low carb chocolate when it comes to desserts and baked goods because it bakes and melts lovely. Plus the taste is delicious, it doesn't leave you a weird aftertaste!

Ah! These are fantastic, the chocolate with the cream cheese is just an epic topping and amazing combination of flavors! Along with the nuts from the Jojo's chocolate and berries included this is a fiesta to your taste buds.


A great recipe to feed a crowd since it's easy to make and it makes 12 cookie cups. These will impress your guests, or even for yourself! I didn't share these baddies, they were delicious!

Strawberry Cheesecake Cookies

Ingredients

Cookie Base

Cheesecake Filling


Method

  1. Preheat the oven at 350.

  2. Mix the dry ingredients for the cookies.

  3. Add the liquids and egg, mix well.

  4. Press the dough into twelve silicone muffin cups.

  5. Create a deeper center using a spoon, we'll use it to add the cream cheese there.

  6. Bake for 18-20 minutes.

  7. Mix the cream cheese with granulated monk fruit and top the baked cookies with part of the cream cheese.

  8. Cut each chocolate into four pieces.

  9. Add the sliced strawberries and chopped chocolate.

  10. Enjoy!
