Strawberry Honey Cornmeal Bread

Serves 6 big slices


Ingredients

  • 1 cups gluten-free flour

  • ½ cup cornmeal

  • 1/4 cup of freeze dried strawberries (or fresh)

  • 1/4 teaspoon salt

  • 1 tsp of baking powder

  • 1 tsp of baking soda

  • 1/2 cup of granulated monk sugar

  • 3 eggs

  • 1/4 cup of Manuka honey

  • 2 tsp of vanilla extract

  • 3/4 cup of greek yogurt

  • 1/2 chopped Rise Bar  Honey Almond Protein Bar


Toppings

  • 1 cup of sliced strawberries

  • 1/2 cup of sugar-free glaze*

  • 1/2 chopped Rise Bar  Honey Almond Protein Bar *Mix in powdered monk fruit with almond milk


Instructions

  1. Preheat the oven at 350F.

  2. Mix all dry ingredients for the bread.

  3. Add in the greek yogurt, vanilla extract, honey, and eggs. Mix well.

  4. Stir in the chopped bar and transfer the batter into a silicone baking dish.

  5. Bake for 40 minutes.

  6. Let it cool down, add the glaze, strawberries and chopped bar.

  7. Slice and enjoy!
