Serves 19 cookies
Ingredients:
Cookies:
1 1/4 cups gluten-free all-purpose flour
1/4 tsp sea salt
1 tsp baking soda
1 tsp baking powder
2/3 cup granulated monk fruit
1 tbsp vanilla extract
3/4 cup peanut butter
2 whole eggs
1 tbsp whole milk
Strawberry Filling:
1 cup unsweetened almond milk
Garnish:
1/4 cup crushed peanuts
1/4 cup drippy peanut butter powder
Instructions:
Preheat the oven to 350°F.
Mix dry ingredients: Combine the gluten-free flour, sea salt, baking soda, and baking powder in a bowl.
Add wet ingredients: Incorporate the granulated monk fruit, peanut butter, eggs, milk, and vanilla extract. Mix until fully combined.
Shape cookies: Form 6 large cookies from the dough and place them on a baking sheet.
