Strawberry Ricotta Rice Pie

Serves 4-6 pieces
Ingredients:
2 Minute Jasmine Rice Cups
2/3 cup of granulated monk fruit
2 cups of ricotta cheese
2 whole eggs
2 teaspoons of vanilla extract
1/2 teaspoon of almond extract
Topping:
1 cup of whipped cream
1 cup of sliced strawberries
1 tablespoon of crushed graham cookies (gluten-free)
Instructions:
Preheat your oven to 350°F.
Remove the film from each Minute Rice Cup and microwave for 90 seconds (one cup is microwaved for 60 seconds).
In a mixing bowl, combine ricotta cheese, vanilla extract, almond extract, and the granulated monk fruit until fully incorporated.
Stir in the cooked rice and mix well to ensure even distribution.
Pour the batter into a baking mold and bake for 40-50 minutes or until the top is a lovely golden brown.
Allow the pie to cool completely before decorating with your whipped cream, sliced strawberries, and a sprinkle of crushed graham cookies.
