Now that I'm setting the mood for the summer these popsicles sounded like the perfect summer dream to make, in a popsicle! The method is super easy and the results are mind blowing!

Dreamy and soft pinky popsicles with a touch of Mexican shortbread cookies. For the shortbread effect of this recipe I simply used the Grain free Cookies from Siete, Mexican Shortbread. Also a major throwback to my childhood because these cookies are a must to enjoy your coffee in the mornings in Mexico.

These are soft, not hard thanks to the use of the protein powder that adds thickness to them! The combination so textures it just amazing and every lick and bite it's just a lick close to heaven (I know, lol).

Strawberry Shortcake Popsicles

Serves 10 servings
Ingredients
12 pieces of the Grain free Cookies from Siete
2 scoops of Nuzest in Wild Strawberry (PURELYHL for discount)
2 cups of nut milk
1/2 cup of strawberries
Cinnamon
1 bar of Evolved Chocolate Bars in Cashew Butter (or your favorite one)
1/2 cup of granulated monk fruit (PURELYHL for discount)
Method
Blend the nut milk with strawberries, cinnamon and protein powder.
In 10 silicone popsicle mold place chopped cookies and chocolate into the bottom.
Add the strawberry blend on top.
Add popsicle sticks and freeze overnight.
Optional: drizzle coconut butter and top with crushed cookies.
