Street Corn Zucchini Cilantro Soup

Serves 1


Ingredients

  • 1 pouch of I Eat My Greens in Zucchini Cilantro Soup

  • 2 cups of organic canned corn (drained)

  • 2 tsp of taco seasoning

  • 2 tbsp of nutritional yeast

Toppings

  • 2 tbsp of cotija cheese

  • 2 tbsp of chopped cilantro

  • Red pepper flakes


Instructions

  1. Mix all the soup with taco seasoning, nutritional yeast and corn.

  2. Microwave for 2 minutes.

  3. Serve in a bowl and add extra corn snacks for toppings.

  4. Enjoy!
