Life has always something good waiting for us, and that's a fact. Last night I was just thinking that settling down because of the fear of not finding a better opportunity it is just crazy. I'm here to tell you this, you are worth it and you deserve to have whatever you like in this life.
Set your intentions, picture your future. Good things are always coming. And this also applies to every season! Berry season is here and I couldn't be happier! There's a different feeling when it comes to eating berries in berry season instead of eating them in the winter or during fall, do you feel me?
Besides the extra freshness of the produce it defitenely sets the mood for spring, summer and all the bright colors and will all of that, NO BAKE RECIPES! One of my favorite, probably all year long because they are great to keep in the freezer ready to fight but also because they require less steps in the process of making them.

It hits all spot, I'm telling you! And if you haven't tried sunflower seed butter you must get some very soon, it's such a tasty, creamy and nutrient dense nut butter. One of my favorite from the range of butters made from nuts and/or seeds.
I am constantly using sunflower seeds or sunflower seed butter because of seed cycling. It has become one staple for more than a year now! Time really goes by so fast! I started using seed cycling as a nutritional approach on healing my period, supporting my hormones and in the process I also controlled my acne caused by those hormonal imbalances.
Sunflower seeds provide our bodies with:
- Vitamin E
- Vitamin B6
- Vitamin B6
- Vitamin B3
- Copper
- Manganese
- Selenium
This is a key combo of nutrients since vitamin E is essential work synergistically to fight free radicals. Plus considering that it's a seed, it does have a great dose of healthy fats, which are essential to the absorption of fat soluble vitamins (A, E, D, and K). Selenium is also a key nutrient for hormonal health, specially when we are talking about our thyroid gland.

You are going to love them! I'm genuinely obsessed with this combination, the result was dreamy (I just started drooling again!), these are super creamy, easy to make and mess free! You'll only need one bowl
We are using just basic, simple ingredients. For sweetener we are using my beloved monk fruit from Lakanto, a staple in my pantry for all my sweet recipes, ricotta cheese that has been my latest recipe obsession because it's super versatile, and of course sunflower seed butter (unsweetened).
The "N' Creme" Part of the recipe:
In this recipe we are also using ricotta cheese but if you are sensitive to dairy I would suggest switching to vegan ricotta cheese made from almonds or any other nut will do. The point here is that ricotta cheese or its vegan alternative will create that "N' Creme" Part of the recipe.
Toppings!
Also essential, we are taking advantage of this seasonal goodness, a delicious gift from Mother Nature aka strawberries! And because chocolate goes so well with strawberries, plus we are going that extra mile while keeping it SUPER LOW CARB, we are finishing things up with low carb chocolate chips (I use ChocZero).

Sunflower Strawberries N' Creme Pies

Serves 12
Ingredients
3/4 cup of sunflower seed butter
1/4 cup of granulated monk fruit
1/4 cup of hot water
2 cups (300g) of ricotta cheese
Toppings
1/2 (80g) cup of sliced strawberries
1/4 cup (42g) of low carb chocolate chips
Method
Mix all the ingredients from the filling very well.
Pour the mix into twelve silicone muffins cups.
Top with strawberries and chocolate chips.
Freeze for a couple of hours, ENJOY!
