Sweet Potato Almond Cookies (Paleo, Low Carb)


The other day the cold weather hit me hard, I wasn't expecting that drastic change at all! The cold weather outside and the coziness from the inside called for cookies, what's one food that puts you in coziness mode?


I remember that I used to bake huge batches of cookies for my friends, family and their friends too, just because I enjoy baking so much! Of course at the time I didn't care about the quality of ingredients and the impact on our bodies, now that I have a whole different perspective I have the power to cook healthy and delicious treats for my favorite people.


Are ingredients a little bit more expensive? Yes, kind of. But the point is not to make fancy recipes, but to create recipes that your body will appreciate, if you have the power to choose, do whatever makes you feel better. In the other hand, cheap ingredient can be kind of scary, have you read the labels? The ingredient list is huge when you only need basics to create a recipe!




These cookies are super simple and so delicious, not to sweet I must say but just perfect with a cup of almond milk. You'll notice that the recipe is very easy to follow and made with ingredients that your body will appreciate.


I'm not trying to throw shade to all of those ingredients, but honestly we are living in a era were people are getting sicker and with severe conditions everyday, and if I can put this knowledge out there and make you realize how important is to nourish your body... then I'm doing a right thing. And please, it's not about obsessing over ingredients but to choose better ones most of the time.


Ready for this recipe? I also used sweet potato flour which has a great price and you can use "PUREHL" for 20% discount, if you don't have some you can substitute with cassava or almond flour.




INGREDIENTS (Makes 12 cookies)


- 1/2 cup + 2 Tbsp of almond flour

- 1/3 cup of sweet potato flour

- 2 Tbsp Ghee

- 1/4 cup of shredded coconut

- 1 Tbsp of beef gelatin + 1/4 cup of water

- 1/4 tsp of baking soda

- 1/2 tsp of cinnamon

- 1/3 cup of monk fruit or coconut sugar


METHOD


1. Preheat the oven at 350F.

2. Combine all the dry ingredients in a bowl.

3. Mix the beef gelatin in water and add to the mix together with the melted ghee.

4. Mix until you get a smooth consistency, and separate the mix in 12 cookies.

5. Bake for 18 minutes.
