Tahini Pitaya Tropical Pies (Vegan, Gluten Free)


Tahini has been a trendy food in the wellness community for a while now and I honestly think, from my nutritionist stand point that it really deserves it's place! Overall, seeds are one of my favorite foods to incorporate into my lifestyle.


My love for seeds started to rise since I started to do my research for seed cycling and later applying it to my self. I've been aware of the power of food ever since I started my university studies in nutritions but my respect started growing and growing as I was applying different things into my lifestyle.


We are now living in such a great era, when we can have access to super foods from around to world and get to enjoy the goods that Mother Nature has given us. We get to decide whether to use this benefit or just ignore and keep fueling our bodies with highly inflammatory foods.


I believe that everything in life, everything is on moderation and moderation it self. It's all about the MIND and BODY connection.


This body-mind connection also applies to hormones. Seed cycling is a great tool when it comes nourishing our bodies in order to balance hormones but if we are constantly stress probably we won't see results.


Nutrition Tip:

- Before eating take deep breaths before eating. We want to set our body in a more chilled mode in order to digest better. We don't want it to be in a flight and fight state. We want that our blood flow is also focusing in our digestive system.


Food, or course, is also powerful and these bites are A WHOLE NEW LEVEL. If you are a tahini fan, you are going to love these bites for several reasons:

I mean, who doesn't love mess free recipes? And these are perfect for meal prep since you can store them in the freezer. They are loaded with nutrients and every bite is an explosion of flavor! With all the sweetness coming from Monk Fruit, my favorite natural based sweetener with no glycemic impact, this is perfect for people thriving on the keto, paleo, low carb and to keep low those glucose levels and control them in people with diabetes.


Some of the ingredients included on this recipe are:

- Tahini

- Pitaya chips or in powder

- Granulated monk fruit

- Grain free and sugar free granola


And that's it! Simple, just those ingredients, plus water or you can use nut milk of you want it to. The base is made from the creamy tahini, pitaya (also known as Dragon Fruit) chips that eventually we turn them into powder and the granulated monk fruit.


Toppings make things even more fun plus they add the special crunchy factor we like and love. I used a low carb, grain free and sugar free granola. As a love to say: Always read the ingredients of the products before reading the nutritional information numbers.

Once you had read the ingredients, then you can speculate how will the nutritional information will be. And granolas constantly have inflammatory oil and loads and loads of sugars. It's hard to find good ones but totally doable!

Nutritional content from these bites, specifically from the main ingredients: Tahini and Pitaya.

Tahini: Rich on vitamin E, copper, selenium, zinc, vitamin B1 and B6.

Pitaya: Vitamin C, B1, B2, B3, iron, calcium and phosphorus.

Tahini Pitaya Tropical Pies

Method

  1. Mix the ingredients of the filling in a bowl, except for the pitaya chips.

  2. In a food processor add the pitaya chips and pulse until you get them all grounded.

  3. Add them to the mix and str well.

  4. Pour the mix into twelve silicone muffin cups.

  5. Top with grain free granola.

  6. Freeze for 3 hours, ENJOY!
