No matter the weather it's always a good time to get some cold treats such as ice cream, smoothies, no bake bites (like these ones) just as it's always a good moment to have grilled food or roasted veggies... or at least I think so.
I made some of these tahini and sunflower seed bites with the intention of making sure I was getting enough of the seed cycling benefits (read more about this HERE) and they turned out better than the expected.
Have you every been in the kitchen, just whipping around a bunch of "random" ingredients not knowing how everything will turn out? Well, these bites blew my mind once I had the first bite! It only took one bite of these to take me back to those summer days when my mom used to take me for a sundae.
Not against those types of treats but I'm all about creating delicious and indulgent recipes that will nourish bodies without having a blood sugar impact and without ingredients that are not fueling a nourishing purpose.

The base of the ingredients here are the seed butters sesame seeds and sunflower seed butter. Two of my favorite because of the good taste and nutrient profile. I believe that it's possible to indulge on healthy treats that at the same time can be loaded with antioxidants. Can we even ask more about a treat? Just a great option to satisfy that sweet tooth.
And you can always customize your ingredients, for example, the vegan protein can be substitute by other powder that absorbs water such as coconut flour. Or maybe you can use almond flour but instead of 1/4 cup you'll be needing a little bit more.

Tahini Raspberry Sundae Bites (Good Mood Food)

Serves 12
Ingredients
1/2 cup of coconut flour
1/4 cup of Daily Uplifter - Gut Happy Vanilla
1/2 cup of granulated monk fruit
1/4 cup of sunflower seed butter
1/4 cup of tahini
1 cup of hot almond milk
1/2 cup of frozen raspberries
3 Tbsp of cacao nibs
Method
Mix all the dry ingredients.
Add the liquid ingredients and stir well.
Pour the mix in twelve muffin cups.
Top with raspberries and cacao nibs.
Freeze for up to 3 hours.
