Tahini Vanilla Cinnamon Fig Bars

Serves 6-12 bars
Ingredients
For the Bars
3/4 cup of pancake mix
1/2 cup of oats
1 tsp of baking soda
2 scoops of vanilla protein
1 tbsp of cinnamon
1/2 cup of granulated monkfruit or alullose
1/2 cup of raw tahini butter
1/2 cup of water
1 tsp of vanilla extract
Fig Paste
1 cup of dried figs
1/2 cup of warm unsweetened almond milk
1 tsp of vanilla extract
1/3 cup of granulated monk fruit
Monk fruit powdered sugar (optional)
Method
Preheat the oven at 350F.
Mix all the ingredients for the bars in a bowl.
Pour the batter into a 8x8 greased baking dish.
Blend the ingredients for the fig paste for 30-40 seconds.
Pour over the base and create swirls with a fork.
Add the toppings and bake for 25-28 minutes.
Let it cool down, add sugar-free powdered sugar (optional) cut into 9 pieces and enjoy!
