Speaking of all the feelings, these Tiramisu Chocolate Cookie Bites managed to make my tastebuds experience all the feelings as well because, woah! These are absolutely EPIC.
I have always wanted to make a tiramisu recipe so this happened, and as usual, some twists happened during the process to add my personal signature to this classic recipe. You are simply going to love it!
Basically, it's a fantastic explosion of flavors and textures. Let's start with the fact that a tiramisu involves a coffee flavor. Then we've got the explosion of flavors from the chocolate and, wait for it, cookies! I know that the classic has lady fingers but we are stepping out of the box here!

We are using ricotta cheese but nowadays we can found vegan alternatives that also taste great! Just look for the ones with the most simple ingredients list or you can also find a homemade version. The thing here is that you cannot miss out on this spectacular recipe!
For sweetener we are using granulated monk fruit from Lakanto, this is my favorite brand and I usually always have a some packs on stocks since I use it on repeat on all of my recipes as a cane sugar replacement. Use PURELYHL for discount!
For chocolate I also used Lakanto's chocolate! Keto friendly and has a great taste honestly! for cookies I used Bhu Foods, these are keto and vegan friendly as well.

Tiramisu Chocolate Cookie Bites

Serves 12
Ingredients
- 2 cups of ricotta cheese
- 1/4 cup of black coffee
- 1 Tbsp of granulated coffee
- 1/3 cup of monk fruit (PURELYHL for discount)
- 1 tsp of cinnamon
Toppings
- 3 low carb cookies I used these
- 3 oz. of low carb chocolate
Method
1. Mix all the ingredients well and pour into twelve silicone muffin cups.
2. Top with crushed cookies and chocolate and freeze for up to 3 hours.
3. Enjoy!
