Anything Mexican is something that I love, it's my main inspiration and for these Valentine's Month I decided to create this amazing tres leches chocolate cake, baked with all the love, hearts and pink colors thanks to elderberry powder!
Delicious tres leches cake, secretly healthy, low carb and packed with elderberry goodness! There's a lot to say about this recipe; a healthy, gluten free, low carb and with a fun thematic! Just in time for Valentine's Day, or really any time of the year... these are just a tastebud pleaser.
About this Valentine's Day Tres Leches Chocolate Cake:
This is just a fun and super easy recipe that you just have to try! I decided to keep it extra easy by using a keto vanilla cake mix and just adding my personal touch and goodness, in this case I included some elderberry in the attempt of adding a pink/red color to the cake... kind of a fail but I tried and won with the frosting.
To add that chocolate factor of this recipe I also included some of the low carb chocolate bars on top, used Nebula in Oat Milk, such a game changer! And it really brings up that extra taste and soft texture from these chocolate bites, just incredible guys.
Key Ingredients:
Tres leches cake, means three milks, kind of a poke cake but the Mexican version. For this recipe I used the Super Coffee Keto Mocha Coconut Creamer, their ingredients are always the best and the taste is always delicious too, this smooth mocha is basically a healthy, dreamy and indulgent vanilla milk shake (keto and gluten free!) as part of the three milks.
Sharing is optional! These are simply perfect for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment. The base is soft and the filling of these is creamy thanks the the organic cream cheese... also source of probiotics!
For the cake crust I simply used Zensweet, that's it's also keto friendly and low in carb. Their products are just amazing, have tried their brownie mixes and monk fruit and they are all legit made with the best ingredients. This was no different.

With a delicious addition of alullose instead of refined sugars for the win! In this occasion I used a homemade version of alullose from Rx Sugar which is made from foods while having no calories or a glucose impact.

For the special touch of this recipe I decided to use some Zensweet, as mentioned earlier their mixes have been one of my favorite thanks the the legitness from their ingredients, they never disappoint.

The end result
Soft and flavorful! The contrast of flavors and textures is just amazing, the toppings are just divine... the texture of the cake with the three milks is just amazing, really brings up a great taste and comfortless. A very moist cake, soaked with goodness without falling apart and with a delicious cream cheese topping.
Melts in your mouth! The keto cake mix really works for this recipe, it doesn't fall apart even though the we have a heavy topping and it's completely soaked in mix of the tres leches. My friends and boyfriend loved these cookie pies, they didn't even know these were low carb and healthy!
You might want to save this recipe because a second batch might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to make some more.
Pro tip: You can also drizzle some melted chocolate to make them even prettier and tastier!

Valentine's Day Tres Leches Chocolate Cake

Serves 12 servings
Ingredients
Cake
1 pack of ZenSweet Keto Vanilla Cake Mix
3/4 cup of egg whites
1/3 cup of elderberry powder
1/4 cup of coconut oil
Filling- Tres Leches
1/4 cup of almond milk
1/4 cup of Super Coffee Mocha Coconut Keto Creamer
1/4 cup of heavy cream
1/3 cup of alullose
Topping
1 block (190g) of cream cheese
1/3 cup of alullose
2 tbsp of elderberry powder
1 chocolate bar (I used Nebula in Oat Milk)
Method
Preheat the oven at 350F.
Mix the ingredients for the cake in a deep bowl.
Pour the cake batter into a 8x8 silicone baking dish.
Bake for 18-22 minutes.
Let it cool down and poke some holes with a fork.
Mix the ingredients for the tres leches and soak the cake with it.
Mix the ingredients for the topping and spread over the cake and finish up with chocolate and sprinkles.
