Vanilla Pudding Muffins (Keto, Gluten Free)


Let me just start with this. The perfect description for these muffins is MOIST, sorry for the people who dislike this word, but in contrast of that preference, you are still going to love this delicious recipe!


As soon as I cook this out of the oven and did my inspection just to see what was the result of today's kitchen experiment pudding bread popped into my mind! Does somebody else's find pudding bread comforting?


Well, that was the case for this girl over here (me!) because I find saucy recipes extra comforting. Hello enchiladas, marinara sauce, casseroles, soups! And today, these Vanilla Pudding Muffins.


The secret of this crazy and delicious recipe is greek yogurt! And funny enough this recipe also reminds me of the Mexican classic, Tres Leches. Another moisty and creamy dessert recipe, oh! And did I mentioned that I have a simple Paleo Pudding Bread recipe? You are going to love that one too! Easy peasy.


The ingredients on this recipe are super simple. Keto friendly since each serving contains 5.7g of total carbs and 3.2g of fiber. That makes 2.5g of net carbs.

You can store them in the freezer and that way you'll have a healthy sweet treat for the rest of the week. Or maybe you have a friend or family reunion and you are in charge of the dessert? This recipe is your guy!

Vanilla Pudding Muffins

Serves 12


Ingredients

- 2/3 cup of coconut flour

- 1/3 cup of almond flour

- 1/3 cup monk fruit

- 1 of tsp baking powder

- 1 tsp cinnamon

- 3 eggs

- 1/4 cup of coconut butter

- 1/4 cup of ghee

- 2 containers (10.6oz) of greek yogurt


Method

1. Preheat your oven at 350F.

2. Mix all the dry ingredients in a bowl.

4. Add eggs and mix well, then incorporate the melted butters and mix again.

5. Add the greek yogurt and mix again.

6. Pour the mix into twelve silicone muffin cups.

7. Bake for 25 minutes.
