Caramel Dirty Chai Cookies (Momofuku style)

Serves 12 cookies
Ingredients
Homemade Caramel
3/4 cup of powdered monk fruit
1 tsp of vanilla extract
1 tsp of baking soda
1/2 tsp of cream of tartar
1 tbsp of vegan butter alternative
2 tbsp of water
Cookies
3/4 cup of rich chocolate pea protein Nuzest (PURELYHL for discount)
1/4 cup of brown monk fruit
1/2 of granulated monk fruit
1/2 cup of coconut flour
1 tbsp of instant coffee
1/2 tsp of baking soda
1/2 cup of almond butter
1 banana (heated in the microwave for 1 minute)
1/4 cup of strong chai tea
2 tsp of vanilla extract
1/4 cup of sugar free dark chocolate chips
Method
Mix all the ingredients for the brittle, pour & spread into a silicone dish and microwave for 3 minutes.
Refrigerate for 1 hour or more.
Preheat the oven at 350F.
Mix all the ingredients for the cookies.
Create 12 cookies, add the crushed brittle and chocolate on top.
Bake for 15 minutes.
