Coconut Pomegranate Pecan Cookies

Serves 11 cookies
Ingredients
Homemade Cashew Brittle
3/4 cup of granulated monk fruit
1 tsp of vanilla extract
1 tsp of baking soda
1/2 tsp of cream of tartar
1/4 cup of chopped cashews
1 tbsp of vegan butter alternative
2 tbsp of water
Cookies
3/4 cup (120g) of Happy Way Popcorn Protein (happymaria for discount)
1/2 cup of coconut flour
1 tsp of baking soda
1/2 cup of granulated monkfruit or alullose
1/2 cup of Artisana Organics Cashew Butter
1/4 cup of water
1 banana (heated in the microwave for 1 minute)
1/4 cup of sugar-free white chocolate chips
Method
Mix all the ingredients for the brittle, pour & spread into a silicone dish and microwave for 3 minutes.
Refrigerate for 1 hour or more.
Preheat the oven at 350F.
Mix all the ingredients for the cookies, mix in the white chocolate chips and crushed brittle.
Create 12 cookies and bake for 15 minutes.
