Vegan Jalapeño Queso Poppers! (Gluten Free & Low Carb)

These are so good that it's hard to stop at one! These are super easy to make; gluten free, low carb and vegan. The jalapeño is roasted and seasoned... stuffed with my special mix! The full recipe is below!

Gotta love all the some cheese! This is a simple way to enjoy vegan cheese... on a jalapeño. Great for football season too and I included Lesser Evils Sun Poppers to add some sour cream crunch and flavor on top.

Pro tip: You can even air fry the waffles a couple of minutes (2-3 minutes) for a crispier experience!

Chocolate Cherry Waffles

Serves 4 servings


Ingredients

For the Waffles

  • 4-6 jalapeños sliced in half without seeds

  • 1/4 cup vegan cream cheese

  • 2 tbsp of vegan queso🧀

  • salt and pepper to taste

  • 2 tbsp of Lesser Evil Sun Poppers in Vegan Sour Cream & Onionfinely ground.


Method

  1. Preheat the oven at 370F.

  2. Bake the jalapeños for 12-13 minutes.

  3. Mix the cream cheese, queso and seasonings in a bowl and mix well.

  4. Stuff each jalapeño with the mix and top with crushed #SunPoppers.

  5. Enjoy!
