This is a dessert that usually contains eggs, but we are keeping it vegan and air fried!


This is my iconic Vegan Leche Frita, this is just a simple and epic combo that you need to make to satisfy that sweet tooth, in a delicious and healthy way... this is not your regular creamy and thick Vegan Leche Frita... this is made with healthier ingredients while also being vegan.

This recipe overall is gluten-free, low sugar and vegan friendly as well. I used the Nutpods French Vanilla Coffee Creamer (PURELY_HEALTHY_LIVING for discount) to create some magic along with some cornstarch, cinnamon, vanilla extract, granulated monk fruit and vegan friendly cereal.


This low-sugar and gluten-free Vegan Leche Frita is perfect to make no matter the year. The recipe it's easy to make and extremely delicious! It's an unmissable recipe that everyone will love and will also nourish your body... sugar-free and of course also a great source of antioxidants and healthy fats.

Vegan Leche Frita

Serves 8 pieces


Ingredients

Leche Frita

  • 1 pack of 330ml of Nutpods French Vanilla Coffee Creamer (PURELY_HEALTHY_LIVING for discount)

  • 1 cup of unsweetened almond milk

  • 1/2 cup of cornstarch

  • 2/3 cup of granulated monk fruit

  • 2 tsp of vanilla extract

  • 2 drops of orange essential oil

Coating

  • 1/2 cup of unsweetened almond milk

  • 1 cup of cinnamon cereal

  • 1/2 cup of gluten-free flour


Method

  1. Blend all the ingredients for the leche frita.

  2. Pour the batter into a silicone baking dish.

  3. Microwave for 5 minutes, keep an eye to avoid it from spilling the mix.

  4. Refrigerate for a couple of hours, even better overnight!

  5. Remove the leche frita from the container, slice.

  6. Crush the cereal.

  7. Cover the slices in gluten-free flour, then cover with almond milk and finally on the cereal.

  8. Air fry for 20 minutes at 325F.

  9. Let it cool down and enjoy!
