White Chocolate Apricot Protein Bars

Serves 8 large bars
Ingredients
1 1/4 cup of oats
4 scoops of Chike Protein Coffee in Sweet Cream
1 tsp of baking powder
2/3 of RxSugar alullose (MARIA20 for discount)
1/2 cup of egg whites
6 tbsp of almond butter
1 tsp of vanilla extract
1 cup of chopped fresh apricots
1/4 cup of sugar-free white chocolate chips
Optional sugar-free glaze (powdered monk fruit with a splash of almond milk)
Instructions
Preheat the oven at 350F.
Mix all the dry ingredients.
Incorporate the almond butter, vanilla extract and egg whites, mix well.
Add the apricots and white chocolate chips, stir again.
Transfer to a silicone 8x8 baking dish.
Bake for 25 minutes and let it cool.
Add optional glaze, and enjoy!
