White Chocolate Miso Pumpkin Cookies

Serves 6 large cookies


Ingredients

Cookies

  • 1 1/2 cups of gluten-free all purpose flour

  • 1 tsp of cinnamon powder

  • 1 tsp of baking soda

  • 1 tsp of baking powder

  • 1/2 cup of granulated monk fruit

  • 2 tsp of vanilla extract

  • 1 whole eggs

  • 1/3 cup of almond butter

  • 1/3 cup of pumpkin puree

  • 1/4 cup of miso paste (I used white)

  • 1/4 cup of sugar-free white chocolate chips


Instructions

  1. Preheat the oven at 350F.

  2. Mix the dry ingredients for the cookies.

  3. Add the wet ingredients and mix until fully incorporated.

  4. Mix in part of the chocolate chips and leave some for topping.

  5. Create 6 large cookies and top with leftover chocolate chips.

  6. Bake for 11 minutes (for chewy inside!).

  7. Let them cool down and enjoy!
