This is my iconic White Chocolate Pistachio Rice Pudding, a simple and epic combo to satisfy that sweet tooth, in a delicious way. This is my quick version using Minute Instant Jasmine Rice– fluffy, ready in 5 minutes, and just great for this dessert recipe.

This recipe overall is gluten-free, low sugar and vegan friendly, as well. I used Minute Instant Jasmine Rice, coconut milk, vanilla extract, pistachio coffee creamer, sugar-free white chocolate chips and pistachios to create some magic.

White Chocolate Pistachio Rice Pudding

Serves 1
Ingredients
1 cup of Minute Instant Jasmine Rice
1 cup of coconut milk
1 tsp of vanilla extract
1/2 cup of pistachio coffee creamer (or your favorite creamer)
1/3 cup of granulated monk fruit
3 tbsp of sugar-free white chocolate chips
3 tbsp of crushed pistachios
Method
Add the rice into a microwave friendly bowl, add in the vanilla extract, 1/2 cup of the coconut milk and coffee creamer.
Microwave for 5 minutes on HIGH (keep an eye just it case it boils, you might have to microwave in lapses). The milk should be absorbed by the rice.
Let it rest and mix in the rest of the coconut milk, add granulated monk fruit and half of the white chocolate chips.
Microwave for 2 minutes.
Stir and serve on your favorite cups.
Top with pistachios and leftover white chocolate chips and enjoy!
